A refreshing punch, that feels fun and light. A wonderful drink for summer afternoons.

| 50ml | Green Tea, Green Apple, Green Cardamom Infusion* |
| 25ml | Pineapple Juice |
| 10ml | Honey |
| 20ml | Lime Juice |

| 300ml | Ceylon Arrack |
| 300ml | Green Tea, Green Apple, Green Cardamom Infusion* |
| 150ml | Pineapple Juice |
| 90ml | Honey |
| 120ml | Lime Juice |
Method: Combine all ingredients in a rocks glass or punch bowl, and stir to dissolve honey fully (or pre-batch and store in a bottle in the fridge). Add large blocks of ice when ready to serve (muffin or cake tins are great for this), stir briefly and garnish. Enjoy
*Green Tea, Green Apple, Green Cardamom Infusion*
- 400ml Boiling Water
- 6g Green Tea (2 x Tea Bags)
- 4 x Green Cardamom Pods – cracked
- 100g Green Apple – finely sliced
Method: Combine all ingredients in a container and infuse for 15 minutes. Pass through a fine strainer and refrigerate until ready to use.
